Sheet-Pan Chicken Sausage, Feta, and Veggies

Andouille chicken sausages, Brussels sprouts, sliced red onion, grape tomatoes, feta cheese crumbles, and a blend of oil and seasonings comes together for this easy-to-make sheet-pan meal. You’ll love it for its delicious flavors, plus how easy it is to clean up. Your kitchen will be back to normal before you even pull the pan out of the oven.

This recipe has a mild spice from the sausages, creaminess with the baked feta, and layers of flavor with the vegetables and seasonings including dried oregano, garlic powder, and a touch of paprika. For those sausages, I prefer andouille chicken sausages, but you can get creative and use whatever link sausages you have in the fridge.

I think this meal stands on its own, but if you can’t fathom dinner without a starch, take advantage of the heated oven and make my sweet potato fries or serve it over a bed of rice. If you’re a dipper (like me), pair it Dijon or spicy brown mustard for tanginess.

Do I need to score my andouille chicken sausages?

Nope! Other recipes suggest scoring the sausages, but I’m against this, because all of the juices from inside of the sausage are going to escape! That means the sausages might dry out and the vegetables won’t crisp.

What temperature do I bake my sheet-pan meal?

For this recipe, 425 degrees Fahrenheit is the perfect temperature to roast the vegetables and cook the sausages thoroughly.
