Spicy Chicken Wraps
Do you miss McDonald’s snack wraps? If so, this recipe for spicy chicken wraps will satisfy your cravings. It starts with my recipe for blackened chicken tenders. They’re naked so you don’t have to worry about breading, but they have a perfect blend of eight spices so you don’t lose out on flavor.
The other standout ingredient is my chipotle mayonnaise. It’s got chipotle peppers in adobo sauce, lime juice for acidity and zest, chili powder, and paprika. It packs tons of heat and flavor. You can even double the recipe if you want to have it in the fridge for this week’s sandwiches.
Joining the tenders and chipotle mayo, are hot cherry peppers, shredded lettuce, and pepper jack cheese on flour tortillas. If you’re sensitive to heat, you can swap the pepper jack for a milder cheese, or use whatever you have on hand. As always, buying a block of cheese and freshly shredded it is the way to go. But, if you’re short on time, pre-shredded cheese works too.
These wraps stand on their own for a filling lunch. If you want to serve this with a side for dinner, I think roasted Brussels sprouts, sweet potato fries, or broccoli are delicious ideas. If you want to keep it light, quinoa salad or a dollop of guacamole are delish options too.
