Jalapeño Chicken Burgers
You won’t want another beef burger for quite some time after you try these jalapeño chicken burgers with avocado cilantro mayo. These sandwiches are full of flavor with diced onions and jalapeños — but they aren’t breaded and fried like your usual chicken sandwich.
To top it off (no pun intended) I’ve concocted an avocado cilantro mayo that also has jalapeño and fresh lime juice. The sauce is so good that you’ll dip your baked sweet potato fries or whatever side you pair with the sandwich until there’s none left in the bowl. So consider doubling the sauce recipe and keeping it in an air-tight container for up to a week to satisfy your cravings.
I pair the chicken burger and avocado cilantro mayonnaise with arugula for fresh and peppery flavor, sliced tomato, and pepper jack cheese to add a bit more spice to the top of each bite. But don’t hesitate to customize with your favorite burger toppings like red onion, pickles, or maybe more jalapeños?
